Job Summary:

The Chef de Partie (Dim Sum) will be responsible for delivering unforgettable dining experiences by leading the efficient day-to-day operation of the dim sum kitchen, in full compliance with SHDR Food and Beverage standards.
You will oversee the Dim Sum kitchen to ensure all food items are prepared to the standards of flavor and presentation. You will also ensure safe, courteous, professional, efficient, and flexible service creating a magical dining experience for all guests at Shanghai Disney Resort. You will report directly to the Chef de Cuisine and Sous Chef of the Chinese Kitchen.

Responsibilities:

  • Deliver professional and personalized service to customs in a timely and effective manner, promptly report and escalate any unresolved issues or complex guest complaints to management for swift resolution.
  • Organizes and sets up the Dim Sum kitchen as efficiently as possible to increase speed and maximize productivity.
  • Ensures that all dishes from Dim Sum kitchen are prepared consistently and according to standard recipes.
  • Monitors food and operating costs and controls these by reducing waste.
  • Ensures the hygiene standards for kitchen are being met.
  • Ensures that operating and kitchen equipment is maintained to a good standard with minimum breakage.
  • Ensures that Dim Sum kitchen CMs are fully conversant with Employee Handbook and Operational Guidelines.
  • Assistance may be provided in any section of the kitchen as requested by the Chef de Cuisine and Sous Chef.
  • Understands and strictly adheres to Rules and Regulations established in the Employee Handbook and the company’s policies concerning fire, hygiene and health and safety.
  • Responds to changes in the Food and Beverage function as dictated by the industry, company and hotel.

Basic Qualifications:

  • Must be proficient in Cantonese dim sum with minimum 2 years work experience as Chef de Partie or 3-4 years as Demi Chef de Partie in a hotel or large restaurant with good standards, preferably with experience in luxury international brands or well-known restaurants.
  • Qualification in kitchen production or culinary will be an advantage.
  • Comprehensive knowledge of kitchen hygiene practices and occupational health and safety standards will be essential.
  • Basic computer skills in MS Office.
  • Full availability for any dates in a week and any shifts, including nights, weekends and holidays.
