职位介绍:
饼房行政副总厨全面负责领导上海迪士尼度假区内所有西点、烘焙、甜品及糖果点心业务,业务范围覆盖乐园及酒店两大板块。具体包括统筹中央生产厨房、各餐厅西点团队、宴会甜品、零售糖果点心,以及季节性主题活动的甜品供应。
该岗位直接向厨艺总监汇报,需严格遵循原味迪士尼,独特中国风(ADDC)的厨艺理念,确保所有产品与服务的创新性、高效性,并通过西点作品传递迪士尼故事内核。
工作内容:
战略与创意领导力
- 主导乐园及酒店的西点厨艺战略,确保品质统一且故事表达连贯一致。
- 开发兼具迪士尼特色与中国文化的创新西点、甜品及烘焙产品概念。
- 与餐饮部、商品部及市场部协作,打造季节性及角色主题驱动的西点产品线。
- 主导各类节日庆典、特别活动及高规格主题活动的西点创意开发工作。
运营管理
- 统筹乐园及酒店所有西点、烘焙厨房的日常运营工作。
- 负责生产计划制定、产出效率提升及产品品质的标准化管控。
- 协调中央厨房、各餐厅与宴会部门之间的衔接,确保产品及时配送。
- 严格执行危害分析与关键控制点(HACCP) 体系要求,以及卫生清洁标准。
- 确保团队随时具备承接 VIP 活动、节日庆典及季节性主题活动的能力。
人员与团队领导力
- 领导、指导并培养各厨房的西点主厨、副主厨及生产团队。
- 打造以创新、精准、故事表达为核心的浓厚西点文化氛围。
- 在乐园及酒店各板块推行系统化的培训项目及领导力继任计划。
- 与人力资源部合作,开展团队招聘、绩效管理及优秀员工表彰工作。
财务与业务责任
- 全面负责西点业务的食材成本、人工成本及生产力关键绩效指标(KPI)的管控。
- 统筹食谱成本核算、采购标准制定及供应商关系管理。
- 监控财务报表,精准预测业务需求,优化生产成本。
- 支持零售西点产品的定价策略制定及盈利能力分析。
安全、品质与可持续发展
- 确保西点业务全面符合迪士尼内部标准及政府食品安全相关法规。
- 组织开展卫生审计工作,并针对问题制定及落实纠正措施。
- 在食材采购、包装设计及生产流程中,积极推动可持续发展倡议的落地。
此外,您将按照相关法律法规的要求,协助主要负责人做好食品安全管理工作,承担食品安全管理职责,具体包括:
- 掌握相应的食品安全法律法规、食品安全标准以及其他应当具备的食品安全管理能力
- 具备识别和防控相应食品安全风险的专业知识
- 熟悉本企业食品安全相关设施设备、工艺流程、操作规程等生产经营过程控制要求
- 参加企业组织的食品安全管理人员培训并通过考核;
- 督促落实食品生产经营过程控制要求;
- 检查食品安全管理制度执行情况,管理维护食品安全生产经营过程记录材料,按照要求保存相关资料
- 对不符合食品安全标准的食品或者有证据证明可能危害人体健康的食品以及发现的食品安全风险隐患,及时采取有效措施整改并报告
- 记录和管理从业人员健康状况、卫生状况
- 配合有关部门调查处理食品安全事故
- 其他食品安全管理责任
我们希望您:
- 拥有烹饪艺术、西点与烘焙管理相关专业的学士学位或同等学历。
- 具备15 年以上西点行业工作经验,其中包含5 年以上在豪华酒店或度假区担任高级管理岗位的经历。
- 拥有扎实的高端西点、烘焙、巧克力制作及艺术摆盘专业功底,并具备可验证的成功案例。
- 具备出色的领导力、沟通能力及财务管理能力。
- 深入理解HACCP 体系、审计流程及国际西点行业发展趋势。
- 普通话与英语流利。

Job Summary:
The Executive Sous Chef -Pastry is responsible for leading all pastry, bakery, dessert, and confectionery operations across Shanghai Disney Resort, covering both Park and Hotel divisions. This includes overseeing central production kitchens, restaurant pastry teams, banquets, retail confectionery, and seasonal activations. Reporting directly to the Culinary Director, this role ensures innovation, efficiency, and storytelling through ADDC (Authentic Disney, Distinctly Chinese) culinary direction.
What You’ll Do:
Strategic & Creative Leadership
- Lead pastry culinary strategy across Park and Hotels to ensure unified quality and storytelling.
- Develop innovative pastry, dessert, and bakery concepts that blend Disney magic with Chinese cultural authenticity.
- Collaborate with Food & Beverage, Merchandise, and Marketing on seasonal and character-driven product lines.
- Lead creative development for festivals, special events, and high-profile activations.
Operational Management
- Oversee daily operations of all pastry and bakery kitchens across Park and Hotels.
- Manage production planning, output efficiency, and product consistency.
- Coordinate between central kitchens, restaurants, and banquets for timely distribution.
- Enforce HACCP compliance, hygiene, and sanitation standards.
- Maintain readiness for VIP events, festivals, and seasonal activations.
People & Leadership
- Lead, mentor, and develop Pastry Chefs de Cuisine, Sous Chefs, and production teams.
- Build a strong pastry culture focused on innovation, precision, and storytelling.
- Implement training programs and leadership succession plans across all divisions.
- Partner with HR for recruitment, performance management, and recognition.
Financial & Business Accountability
- Manage food cost, labor cost, and productivity KPIs across pastry operations.
- Oversee recipe costing, purchasing standards, and supplier relationships.
- Monitor financial reports, forecast needs, and optimize production costs.
- Support retail product pricing and profitability analysis.
Safety, Quality & Sustainability
- Ensure full compliance with Disney and government food safety regulations.
- Conduct hygiene audits and implement corrective actions.
- Promote sustainability initiatives in sourcing, packaging, and production.
In addition, you will assist the principal person in charge of food safety management in accordance with the requirements of relevant laws and regulations, and assume the responsibilities of food safety management, including:
- Mastering the appropriate food safety laws and regulations, food safety standards and other food safety management skills that should have
- Expertise in identifying and preventing and controlling the corresponding food safety risks
- Familiar with food safety-related facilities and equipment, processes, operating procedures and other production and operation process control requirements in the enterprise
- Participating in the training of food safety managers organized by the enterprise and pass the examination
- Supervision and implementation of food production and operation process control requirements
- Check the implementation of the food safety management system, manage and maintain the records of the food safety production and operation process materials, and keep the relevant documents as required
- For the food that does not meet the food safety standards, the food that has been proved to be harmful to human health, and the food safety risk and hazards, promptly take effective measures to rectify and report
- Record and manage employee health and hygiene
- Cooperate with relevant departments to investigate and deal with food safety incidents
- Other food safety management responsibilities
What To Bring:
- Bachelor’s Degree or equivalent in Culinary Arts, Pastry & Bakery Management.
- 15+ years pastry experience, including 5+ years in senior management within luxury hotels or resorts.
- Proven expertise in fine pastry, bakery, chocolate, and artistic presentation.
- Strong leadership, communication, and financial management skills.
- In-depth knowledge of HACCP, audits, and international pastry trends.
- Fluent in English and Mandarin.
