职位介绍:
经理,餐饮运营负责上海迪士尼乐园内的所有日常餐饮营运。园区餐饮运营包括快餐服务餐厅、餐桌服务餐厅、小食亭及室外餐饮地点。此职位需要带领并激励整个团队的演职人员提供卓越的游客体验,最大化商业机会,并和所有游客保持良好的关系。
此职位需要创新的营运环境以保持不断进步,达到并超越游客的满意度,在遵守迪士尼的质量标准的前提下达到最高的效率。同时,需通过与华特迪士尼幻想工程(WDI)及设施服务部的合作规划流程,推动并执行本业务线(LOB)的长期战略,确保业务的可持续发展。
此职位对整个团队的建设以及确保提供给游客的服务质量负责。
工作内容:
领导及关系管理
- 清晰准确的传达餐饮部营运的远景和目标到每个演职人员。
- 始终如一的指导营运表现和实施管理程序来促进和保持一个良好真诚的服务理念。
- 通过了解培训和发展需求来拓展和管理人才,指导和开展正确的以及可衡量的奖状/奖励来认可表现突出的演职人员。
- 确保发展计划在所有人员中开展以获得职业成长。
- 深挖并复盘所有销售机会,推动乐园餐饮人均消费及其他相关财务关键绩效指标的提升,支持业务的持续发展。
- 与各个部门建立内部工作关系,以加快决策过程并制定双方商定的行动计划,以满足商业需求并超越客人在园区餐饮地点的用餐体验。
- 与各个业务合作伙伴建立有凝聚力的关系网,全面了解市场餐饮趋势,并制定加强公园餐饮业绩的计划。
- 将长期业务发展计划整合并传达到各个运营级别,并时刻遵循业务发展路线。
战略业务计划和执行
- 与收益管理及分析部,市场销售部等合作,在乐园内推动业务战略和活动以有效的达到营运预期的收入与利润。
- 定期审阅部门内流程以确保有效和及时。
- 确保季节性和年度资源能够合理平衡使用。
- 关注营业利润要求,持续挖掘产品与设施的升级机会,并向上海迪士尼度假区相关高层管理人员进行沟通汇报。
- 关注产品开发,有能力发现增强游客体验、推动业务成果的机会。
- 与园区厨务管理者合作,进行季节性和年度产品评估,以推动人均消费。
- 战略性地审查园区各个地点的综合设施项目和整修机会,以满足客人的需求和期望。
- 与市场部合作,制定并推行针对性的市场渗透计划,覆盖本地、全国及国际市场。
- 定期主导乐园餐饮升级项目,联合各业务板块与门店推进实施,并向相关合作伙伴同步全园区的运营标准更新。
财务业绩
- 管理乐园餐饮运营部的财务盈亏。
- 与收益管理及分析部合作进行产品定价和促销以实现运营计划。
- 通过促销和节省成本来战略性地填补与年度运营计划的差距,以提高利润。
- 管控部门的财务业绩,包括营业额,支出和营运收入,以达到短期和长期的财务期望。
- 分析业绩和财务数据以优化行动,促进资源运用和计划最大容量。
运营发展
- 与销售部合作,通过合适的产品组合拓展乐园活动业务,推动整体利润增长。
- 负责餐饮产品的菜单和概念规划、协调和开发。
- 与所有支持部门合作,执行一年中所有季节性活动。
- 与运营整合与开发团队一起为所有综合设施项目和项目管理提供规划。
- 与劳动力管理部门合作,研究劳动力机会和特定地点问题的解决。
- 与人力资源部门合作,关注演职人员的发展。
此外,您将按照相关法律法规的要求,协助主要负责人做好食品安全管理工作,承担食品安全管理职责,具体包括:
- 掌握相应的食品安全法律法规、食品安全标准以及其他应当具备的食品安全管理能力
- 具备识别和防控相应食品安全风险的专业知识
- 熟悉本企业食品安全相关设施设备、工艺流程、操作规程等生产经营过程控制要求
- 参加企业组织的食品安全管理人员培训并通过考核;
- 督促落实食品生产经营过程控制要求;
- 检查食品安全管理制度执行情况,管理维护食品安全生产经营过程记录材料,按照要求保存相关资料
- 对不符合食品安全标准的�����������������品或者有证据证明可能危害人体健康的食品以及���现的食品安全风险隐患,及时采取有效措施整改并报告
- 记录和管理从业人员健康状况、卫生状况
- 配合有关部门调查处理食品安全事故
- 其他食品安全管理责任

Job Summary:
The F&B Operations Manager has direct responsibility for all Park Food & Beverage operations. Park F&B operations include all quick service restaurants, Outdoor Vending locations and table service restaurants. This position should lead and motivate Cast Members in addition to driving exceptional guest experience, maximizing business opportunities, deepening relationships with our multi nationality guest mix.
The role entails the creation of an operations environment for continuous improvement, meeting and exceeding standards of guest satisfaction, efficiency and productivity whilst maintaining a balance of control and process in compliance with Disney’s Quality Standards. The role also drives and executes long term strategies and sustainability of the business for LOB moving forward through partnership and planning process with WDI and Facility Services. The role needs strong relationship building abilities as the interaction with other partners from key support LOBs to work and plan the SHDR seasonal events throughout the year.
The F&B Operations Manager has the overall accountability for people management and should drive behavior to enable optimal service quality for our Guests.
What You’ll Do:
Leadership and Relationship Management
- Clearly articulate and communicate the vision and objectives of Food & Beverage Operations to all Cast
- Drive and maintain a friendly and sincere service culture through consistent performance coaching and implementation of management procedures
- Develop and manage talent effectively through identifying training and development needs, coaching and developing appropriate measurable reward/incentive programs which recognize exceptional cast performance
- Ensure development plans for locations leaders are in place and executed for career growth at all levels
- Intensify and review all sales opportunities to drive Park F&B Per Cap and rest financial KPIs in relations to support continuous business development
- Develop internal working relationships with various LOBs to help speed up the decision making process and come up a mutually agreed actions plan to cater for business needs and surpassing guests’ dining experience in Park F&B locations
- Develop and maintain a cohesive network with various industrial business partners to comprehensively understand the market F&B trends and translate to possible plan to strengthen Park F&B performance
- Consolidate and cascade long term business development plan to various operations level so as to follow the roadmap timely
Strategic Business Planning and Execution
- Drive business strategies and programs at the park by working with Revenue Management and Analytics, Sales and Marketing to effectively meet operating income profitability targets.
- Undertake regular review of department processes to ensure effectiveness and efficiency.
- Ensure resources are balanced with seasonal and annual fluctuating business levels.
- Review ongoing opportunities for product and facility development being mindful of Operating Income requirements and communicating such with relevant Senior SHDR Executives
- Clear focus on the product development side of the business with the ability to identify opportunities to enhance the guest experience and drive business results.
- Partner with Park culinary leaders to enhance seasonal and annual product review so as to drive Per Cap and guests’ spending.
- Strategically review and identify the IFP and Rehab opportunities for various Park locations to match the right guests’ demand and expectations.
- Partner with Marketing team to formulate and develop appropriate market penetration programs to cater for Local, China and International market.
- Regularly in charge and champion the Park F&B enhancement programs with Segment and various sites so that can update related partners on the site-wide operations standards.
Financial Performance
- Management of Food & Beverage Park Operations P&L
- Partner with RM&A to develop pricing and promotions to achieve plan
- Strategically identify and fill “gaps” initiatives with promotions and cost savings to drive profit in the five year plan
- Monitor the financial performance for departmental revenue, expenses and resultant Operating Income in order to meet financial expectations on a short and long term basis
- Analyze performance and financial data to prioritize actions, driving resourcing decisions and capacity planning
Operations Development
- Partner with Sales to grow the Park Event business with the right products to drive overall profit
- Product referring to menu & concept planning, coordination & development
- Partner with all supporting LOBs to execute all seasonal events throughout the year
- Deliver the planning for all projects and project management together with Operations Integration & Development team
- Working with Workforce Management on labor opportunities and development on location specific issues
- Partner with Human Resources to oversee the cast development
You will work as a part-time food safety officer in accordance with the relevant laws and regulations, for work related to food, and engage in food safety management, including:
- Mastering the appropriate food safety laws and regulations, food safety standards and other food safety management skills that should have
- Expertise in identifying and preventing and controlling the corresponding food safety risks
- Familiar with food safety-related facilities and equipment, processes, operating procedures and other production and operation process control requirements in the enterprise
- Participating in the training of food safety managers organized by the enterprise and pass the examination
- Supervision and implementation of food production and operation process control requirements
- Check the implementation of the food safety management system, manage and maintain the records of the food safety production and operation process materials, and keep the relevant documents as required
- For the food that does not meet the food safety standards, the food that has been proved to be harmful to human health, and the food safety risk and hazards, promptly take effective measures to rectify and report
- Record and manage employee health and hygiene
- Cooperate with relevant departments to investigate and deal with food safety incidents
- Other food safety management responsibilities
What To Bring:
- 10-15+ years’ experience in the F&B industry or relevant theme park business.
- Extensive experience in F&B hotel management with exposure to all lines of businesses
- Strong relationship skills consistent with the extensive amount of personal interaction that will take place with Guests and Casts
- Strong perspective of superior guest service and be able to lead a diverse team of Cast Members to deliver such standards
- Solid negotiation, persuasion, communication, presentation and public speaking skills with high level of creativity and innovation
- Demonstrated ability to work within a matrix organization; willingness to work and integrate with multiple partners.
- Fluent in Mandarin and English.
